Banana, date and oat breakfast cookies

Prep time: 10 minutes plus 20 minute resting time

Baking time: 20 minutes

Ingredients:

3 large ripe bananas (or 3.5 medium bananas)

2 cups rolled oats

1 cup chopped dates

1/3 cup unflavoured vegetable oil such as grapeseed oil. I find olive oil does change the taste of the cookie

1.5 tsp vanilla extract

**optional – add handful of semi sweet chocolate chips for a little chocolate flavouring.

Instructions:

Preheat oven to 350F

Mash bananas, add chopped dates, oatmeal, vanilla and oil. Stir to mix well.

Let sit at room temp for 20 minutes.

Drop onto cookie sheet – ungreased

Bake until lightly brown. About 20 minutes.

Allow to cool on a cooling rack and enjoy!

Note: These cookies freeze very well for a grab and go breakfast or snack idea. Will defrost naturally in about 10-15 minutes or you can defrost in the microwave to save time.
