Preparation time: 35 minutes (including marinating time)
Cooking time: 20 minutes
Ingredients:
1.0kg (2.2 lbs) fresh lamb loin chops (about 6-8 chops)
3 tbsp olive oil
1 bell pepper sliced (any preferred colour)
2 cups mushrooms sliced into approximately 1 inch pieces
2 tbsp lemon juice or orange juice
1-2 tbsp minced garlic
1 tbsp thyme
1 tsbp rosemary
1 tbsp vegetable seasoning (I use Club House La Grille Vegetable Seasoning)
1 tsp each of salt and pepper
Instructions:
Preheat oven to 425F.
In bowl or Ziploc-type bag mix together olive oil, juice, garlic, herbs and spices. Add lamb and coat well with mixture. Let marinate for 30 minutes.
Sear marinated lamb on med-high heat in oven safe pan for 3 minutes per side until brown. Add peppers and mushrooms coating with remaining marinade. If needed add extra olive oil.
Transfer to pre-heated oven and bake uncovered about 10 minutes for medium-rare lamb.
Remove lamb, cover and let rest for 5 minutes while the vegetables finish roasting in the oven.
