Homemade Chili

(Makes ~16 1.5cup (375ml) servings – Estimated based on 375ml portion using beef: 375 calories, 30g protein, 9g fibre)

Preparation time: 20-30 minutes

Cooking time: 90-120 minutes


1.5kg (3.3 lbs) lean ground beef or ground turkey

1 medium onion chopped

2 bell peppers (any preferred colour) chopped

3 cups mushrooms chopped

1 x 540ml can of mixed beans

2 x 540ml cans of red kidney beans

1 x 796ml can diced tomatoes

2 x 796ml cans crushed tomato

1 x 156ml can tomato paste


2 tbsp dried savory

2 tbsp dried thyme

1 tbsp minced garlic

1 tbsp black pepper

1 tbsp vegetable seasoning

Cayenne pepper and chili pepper to taste (I add about 2 tsp of each to keep the spice level family friendly)


Sautee chopped onion in about a tsp of olive oil over medium heat in large pot.

Add lean ground beef and cook over medium heat until beef is fully cooked.

Strain beef and onions through strainer lined with paper towel to remove excess liquid fat.

Return beef and onions to pot and add bell peppers and mushrooms.

Add beans, dice tomatoes, crushed tomato and tomato paste.

Add spices and simmer on low for minimum 90 minutes.
